Ingredients

  • 16 oz fresh spinach
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 0.25 tsp ground nutmeg
  • 2 cups Swiss cheese, shredded
  • 0.5 cup panko breadcrumbs
  • 0.25 cup Parmesan cheese, grated
  • 1 tbsp olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

In a large pot, bring a few inches of water to a boil. Add the fresh spinach and cook for 1-2 minutes, or until wilted. Immediately transfer the spinach to a colander and press out excess liquid using the back of a spoon. Set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly until it forms a smooth, golden paste (roux).

Gradually pour in the whole milk while whisking continuously to prevent lumps. Cook for 4-5 minutes, or until the sauce thickens.

Stir in salt, ground black pepper, and ground nutmeg. Reduce the heat to low, then add 1 1/2 cups of the shredded Swiss cheese. Stir until the cheese is fully melted and the sauce is smooth.
