Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 3 large garlic cloves
  • 1 tablespoon ginger
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro leaves

Directions

Step 1

Peel and chop the sweet potatoes into 1-inch cubes.

Step 2

Finely chop the onion, garlic, and ginger.

Step 3

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 4

Add the chopped onion and sauté for about 5 minutes until it becomes translucent.

Step 5

Stir in the chopped garlic and ginger, cooking for another 2 minutes until fragrant.

Step 6

Add the sweet potatoes to the pot along with the vegetable broth, bringing the mixture to a boil.

Step 7

Reduce the heat to low, cover the pot, and simmer for 20 minutes or until sweet potatoes are tender.

Step 8

Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a traditional blender, blending in batches if necessary.

Step 9

Return the pureed soup to the pot if needed, and stir in the coconut milk, cumin, cinnamon, salt, and black pepper.

Step 10

Heat the soup over medium-low heat until all the ingredients are combined and warmed through, about 5 minutes.

Step 11

Stir in the lime juice just before serving for a touch of brightness.

Step 12

Garnish each bowl with freshly chopped cilantro leaves and serve hot.
