  • 1 cup fresh or frozen lima beans
  • 1 cup fresh or frozen corn kernels
  • 2 tablespoons unsalted butter
  • 1 unit small onion, minced
  • 1 unit red bell pepper, diced

  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves (optional)
  • 2 tablespoons parsley, chopped (optional garnish)

Directions

Step 1

If using fresh lima beans and corn, prepare them by removing kernels from the cob and rinsing the beans. If using frozen varieties, let them thaw slightly.

In a medium saucepan, bring 2 cups of water to a boil. Add the lima beans and cook for 5-7 minutes, or until tender. Drain and set aside.

In a large skillet, melt the butter over medium heat.
