Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 2 medium carrots, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 2 cups dried split peas, rinsed and sorted
  • 6 cups vegetable broth
  • 2 cups water
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 cup heavy cream (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Add the rinsed and sorted split peas to the pot, followed by the vegetable broth, water, dried thyme, bay leaf, salt, and pepper.
