Ingredients

  • 2 pounds Russet or Yukon Gold potatoes
  • 6 cups Fresh spinach
  • 4 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 2 cloves Garlic
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Grated Parmesan cheese (optional)

Directions

Step 1

Peel the potatoes and cut them into 1-inch chunks. Rinse them under cold water to remove excess starch.

Step 2

Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.

While the potatoes are cooking, heat the olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
