Ingredients

  • 12 oz dried fettuccine noodles
  • 6 cups baby spinach
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 2 cloves garlic
  • 1 cup grated Parmesan cheese

  • 2 tbsp unsalted butter
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper
  • 0.25 tsp crushed red pepper flakes (optional)
  • 1 gallon water (for boiling)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccine noodles and cook according to the package instructions until al dente.

While the noodles cook, heat a large skillet over medium heat. Add the olive oil and butter.

Mince the garlic cloves and sauté in the skillet for 1–2 minutes until fragrant, but not browned.

Add the baby spinach to the skillet, stirring occasionally, until the spinach wilts down, about 3–4 minutes.

Drain the cooked noodles, reserving about 1/2 cup of the pasta water.
