Ingredients

  • 900 grams fresh spinach
  • 225 grams cream cheese
  • 120 milliliters sour cream
  • 60 grams grated Parmesan cheese
  • 120 grams shredded mozzarella cheese
  • 30 grams unsalted butter
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic cloves, minced
  • 15 grams all-purpose flour
  • 240 milliliters whole milk
  • 15 milliliters olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons nutmeg (optional)
  • 60 grams breadcrumbs (for topping)

Directions

Step 1

Preheat your oven to 190°C (375°F) and grease a 9x9-inch (or similar-sized) casserole dish with butter or non-stick cooking spray.

Step 2

Heat a large skillet over medium heat and add the olive oil. Sauté the diced onion for 3-4 minutes, or until it becomes translucent.

Step 3

Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to prevent burning.

Step 4

Add the fresh spinach in batches to the skillet, stirring until wilted. Once all the spinach is wilted, transfer it to a colander and press to remove excess liquid.

Step 5

In the same skillet, melt the butter over medium heat. Sprinkle in the flour and whisk constantly for 1-2 minutes to cook off the raw flour taste.

Step 6

Gradually whisk in the milk, making sure to break up any lumps. Cook while stirring constantly until the mixture thickens, about 3-4 minutes.

Step 7

Reduce the heat to low and stir in the cream cheese, sour cream, Parmesan cheese, salt, black pepper, and nutmeg (if using) until smooth.

Step 8

Add the drained spinach back into the skillet and mix until the spinach is evenly coated.

Step 9

Transfer the spinach mixture to the prepared casserole dish and spread it out evenly.

Step 10

Sprinkle the shredded mozzarella cheese over the top, followed by an even layer of breadcrumbs.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbling.

Step 12

Remove from the oven and let rest for 5 minutes before serving. Enjoy your creamy spinach casserole!
