Ingredients

  • 12 oz rigatoni pasta
  • 1 lb boneless, skinless chicken breast
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 units garlic cloves, minced
  • 5 oz baby spinach leaves
  • 1.5 cups heavy cream
  • 0.5 cup chicken broth
  • 1 cup Parmesan cheese, grated
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rigatoni according to the package instructions until al dente. Reserve 1/2 cup pasta water, then drain and set aside.

Step 2

While the pasta cooks, dice the chicken breast into bite-sized pieces. Season with a pinch of salt and pepper.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, lower the heat to medium and add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

Add the spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted.

Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer and let it cook for 3-4 minutes to thicken slightly.

Stir in the grated Parmesan cheese, salt, black pepper, and red pepper flakes (if using). Continue to stir until the cheese is melted and the sauce is smooth and creamy.

Return the cooked chicken to the skillet, tossing to coat it in the sauce. Add the cooked rigatoni to the skillet, stirring to combine everything. If the sauce is too thick, stir in a little of the reserved pasta water until your desired consistency is reached.
