  • 300 grams Pasta (spaghetti, fettuccine, or your choice)
  • 2 pieces Ripe avocado
  • 2 cups Fresh spinach leaves

  • 2 tablespoons Lemon juice
  • 3 tablespoons Extra virgin olive oil
  • 1 cup Parmesan cheese (optional, for serving)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional, for garnish)
  • 0.5 cup Pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil over medium-high heat and cook the pasta according to the package instructions until it is al dente. Reserve 1/2 cup of pasta cooking water before draining the pasta.

While the pasta cooks, prepare the sauce. Halve and pit the avocados, then scoop the flesh into a blender or food processor.
