Ingredients

  • 1 pound ground beef
  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and minced
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 2 large russet potatoes, peeled and diced
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 4 ounces cream cheese, softened
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon hot sauce (like Tabasco)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 slices optional bacon, cooked and crumbled
  • 2 green onions, thinly sliced (for garnish)

Directions

Step 1

In a large pot or Dutch oven, cook the ground beef over medium heat until browned and fully cooked. Drain excess grease and transfer the beef to a separate bowl. Set aside.

Step 2

In the same pot, melt the butter over medium heat. Add the diced onion, minced garlic, and jalapeño. Cook for 3-4 minutes until the vegetables are softened and fragrant.

Step 3

Sprinkle the flour over the vegetables and stir continuously for 1-2 minutes to cook out the raw taste of the flour.

Step 4

Gradually whisk in the chicken broth. Add the diced potatoes and bring the mixture to a boil. Reduce the heat to medium-low and simmer for 10-12 minutes, or until the potatoes are tender.

Step 5

Stir in the heavy cream, shredded cheddar cheese, cream cheese, Worcestershire sauce, hot sauce, salt, and black pepper. Mix until the cheeses are fully melted and the soup is smooth.

Step 6

Return the cooked ground beef to the pot and stir to combine. Simmer the soup for an additional 5 minutes to blend the flavors.

Step 7

Taste and adjust seasoning if needed. For extra spice, add more hot sauce to taste.

Step 8

Ladle the soup into bowls and garnish with crumbled bacon and green onions, if desired. Serve hot and enjoy!
