Ingredients

  • 12 oz spaghetti (or pasta of choice)

  • 0.5 cup chicken or seafood stock
  • 0.25 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped
  • 1 to taste salt
  • 1 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water and then drain the rest.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Step 3

Season the shrimp with salt and black pepper. Add the shrimp to the skillet and sauté for 2-3 minutes per side, or until just pink and cooked through. Remove the shrimp and set aside.

Step 4

In the same skillet, add the remaining butter and olive oil. Sauté the minced garlic for about 1 minute, or until fragrant.

Pour in the chicken or seafood stock, scraping the bottom of the skillet to deglaze. Allow it to simmer for 2-3 minutes.

Add the drained pasta to the skillet and use tongs to combine it with the shrimp and sauce, ensuring everything is evenly coated.

Step 11

Garnish with fresh parsley before serving. Serve immediately with additional parmesan cheese on the side, if desired.
