Ingredients

  • 12 oz Fettuccine pasta
  • 1 lb Large shrimp, peeled and deveined
  • 4 cups Fresh spinach
  • 2 tbsp Unsalted butter
  • 2 tbsp Olive oil
  • 4 cloves Garlic, minced
  • 1 cup Heavy cream
  • 0.5 cup Chicken or vegetable broth
  • 1 cup Grated Parmesan cheese
  • 0.25 tsp Red pepper flakes
  • 0 Salt
  • 0 Black pepper
  • 2 tbsp Fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining, then set the pasta aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and season with salt and black pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

In the same skillet, lower the heat to medium and add the remaining olive oil and the unsalted butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
