Ingredients

  • 12 oz fettuccine pasta
  • 1 lb large shrimp (peeled, deveined)
  • 4 tbsp unsalted butter
  • 3 cloves garlic (minced)
  • 2 cups heavy cream
  • 1.5 cups grated Parmesan cheese
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp chopped parsley (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Season the shrimp with salt and black pepper. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
