Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter (cold, diced)
  • 0.75 cups whole milk
  • 2 large yellow onions (thinly sliced)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream
  • 2 tablespoons chopped parsley (for garnish, optional)
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.

Step 3

Using a pastry cutter or your fingers, cut the cold diced butter into the flour mixture until it resembles coarse crumbs.

Step 4

Add the milk gradually, stirring just until the dough comes together. Do not overmix.

Step 5

Turn the dough out onto a lightly floured surface, knead gently a few times, and then roll it out to about 1-inch thickness. Use a round cutter to cut out shortcakes and place them on the prepared baking sheet.

Step 6

Bake the shortcakes in the preheated oven for 12–15 minutes, until they’re golden brown. Remove and let them cool slightly.

Step 7

While the biscuits are baking, heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat.

Step 8

Add the sliced onions to the skillet, stirring occasionally, and cook for 15–20 minutes, or until they are soft and caramelized. Reduce the heat as needed to avoid burning.

Step 9

Once the onions are caramelized, pour in the heavy cream and add black pepper. Stir well and simmer for another 2–3 minutes, allowing the sauce to thicken slightly.

Step 10

To serve, split each shortcake in half. Spoon the creamy caramelized onions over the bottom half, then top with the other half of the shortcake.

Step 11

Garnish with fresh parsley (optional) and serve warm.
