Bring 4 quarts of water to a boil in a large pot. Add 1 tablespoon of salt to the boiling water and cook the linguine according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set it aside.
While the pasta cooks, clean the shiitake mushrooms by wiping them with a damp cloth or paper towel, and trim off the tough stems. Slice the mushroom caps into thin strips.
