Ingredients

  • 12 oz linguine
  • 8 oz shiitake mushrooms
  • 4 stalks scallions (green onions)

  • 4 cloves garlic cloves
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 4 quarts water
  • 1 tbsp salt (for pasta water)

Directions

Step 1

Bring 4 quarts of water to a boil in a large pot. Add 1 tablespoon of salt to the boiling water and cook the linguine according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set it aside.

Step 2

While the pasta cooks, clean the shiitake mushrooms by wiping them with a damp cloth or paper towel, and trim off the tough stems. Slice the mushroom caps into thin strips.

Thinly slice the scallions, separating the white and light green parts from the dark green tops. Set aside both parts for later use.

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the sliced mushrooms and sauté for 5–7 minutes, stirring occasionally, until the mushrooms are tender and golden brown.
