Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 2 medium carrot, finely diced
  • 2 celery stalk, finely diced
  • 1 pound ground beef or lamb
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 large russet potatoes, peeled and cubed
  • 4 tablespoons butter
  • 0.5 cup milk
  • 1 cup shredded cheddar cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté for 5-7 minutes until softened.

Step 3

Add the ground beef (or lamb) to the skillet and cook, breaking it up into small pieces, until browned, about 6-8 minutes.

Step 4

Stir in the garlic and tomato paste and cook for an additional 1-2 minutes until fragrant.

Step 5

Sprinkle the flour over the meat mixture and stir to combine. Cook for 1-2 minutes to eliminate the raw flour taste.

Step 6

Add the beef broth and Worcestershire sauce, stirring to combine. Bring the mixture to a simmer and cook for 5 minutes, or until it thickens slightly.

Step 7

Stir in the frozen peas, salt, and black pepper. Remove the skillet from heat and set the filling aside.

Step 8

Meanwhile, in a large pot, bring water to a boil. Add the peeled and cubed potatoes and cook for 15-20 minutes, or until tender when pierced with a fork.

Step 9

Drain the potatoes and return them to the pot. Add the butter, milk, and shredded cheddar cheese, and mash until smooth and creamy. Adjust seasoning with salt, if needed.

Step 10

Transfer the meat filling to a 9x13-inch baking dish and spread it out evenly.

Step 11

Spoon the mashed potatoes over the filling, spreading it out into an even layer. Use a fork to create textured lines on the surface for browning.

Step 12

Place the baking dish in the preheated oven and bake for 20 minutes. If desired, broil for an additional 3-5 minutes to create a golden-brown crust on the potatoes.

Step 13

Remove the dish from the oven and let it cool for 5 minutes before serving. Enjoy your Creamy Shepherd's Pie!
