Ingredients

  • 3 tablespoons Butter
  • 1 tablespoon Olive oil
  • 3 cloves Garlic, minced
  • 2 small Shallots, finely chopped
  • 1 pound Seafood mix (shrimp, scallops, squid, or preferred combination), cleaned and cut into bite-sized pieces
  • 1 cup Dry white wine
  • 1.5 cups Heavy cream
  • 0.5 cup Fish stock or chicken stock
  • 0.5 cup Parmesan cheese, finely grated
  • 1 tablespoon Lemon juice
  • 2 tablespoons Parsley, chopped
  • 0 to taste Salt
  • 0 to taste Black pepper, freshly ground
  • 0.25 teaspoon Cayenne pepper (optional)

Directions

Step 1

Heat a large skillet over medium heat and add the butter and olive oil. Allow the butter to melt completely.

Step 2

Add the minced garlic and chopped shallots to the skillet. Sauté for 2-3 minutes, stirring frequently, until they become fragrant and translucent.

Step 3

Add the seafood mix to the skillet. Cook for 4-5 minutes, stirring occasionally, until the seafood begins to turn opaque and is almost fully cooked. Remove the seafood from the skillet and set it aside.

Step 4

Deglaze the skillet by pouring in the white wine. Simmer for 2-3 minutes, stirring and scraping the bottom of the skillet to release any flavorful browned bits.

Step 5

Reduce the heat to low and pour in the heavy cream and fish stock. Stir gently and let the sauce simmer for 10 minutes until it thickens slightly.

Step 6

Stir in the Parmesan cheese and lemon juice. Mix until the cheese is fully melted and incorporated into the sauce.

Step 7

Return the cooked seafood to the skillet and toss gently to coat. Allow the seafood to warm through for about 2-3 minutes.

Step 8

Season the sauce with salt, black pepper, and cayenne pepper (if desired), adjusting to taste.

Step 9

Remove the skillet from the heat and stir in the chopped parsley.

Step 10

Serve the creamy seafood sauce immediately over pasta, rice, or as a topping for grilled fish. Garnish with extra parsley or Parmesan cheese if desired.
