Ingredients

  • 1 head (about 2 lbs) green cabbage
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 0.5 cups heavy cream
  • 1.5 cups (shredded) sharp cheddar cheese
  • 0.5 cups (grated) Parmesan cheese
  • 1 teaspoon garlic powder
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.75 cups breadcrumbs (panko preferred)
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Remove the outer leaves of the cabbage, then cut it into quarters and remove the core. Slice the cabbage into thin strips and blanch in boiling salted water for 3-4 minutes until just tender. Drain well and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.

Step 4

Slowly add the milk and heavy cream to the roux, whisking constantly to create a smooth sauce. Continue to cook for 3-4 minutes until the mixture thickens.

Reduce heat to low and stir in 1 cup of the shredded cheddar cheese, all of the Parmesan cheese, garlic powder, salt, and black pepper. Mix until the cheese is fully melted and the sauce is smooth. Remove from heat.

Step 6

Spread half of the blanched cabbage evenly in the prepared baking dish. Pour half of the cheese sauce over the cabbage, spreading it to cover. Layer the remaining cabbage on top, followed by the remaining cheese sauce.

Step 7

In a small bowl, combine the breadcrumbs and olive oil. Sprinkle the mixture evenly over the top of the casserole. Finish by sprinkling the remaining 0.5 cup of shredded cheddar cheese over the breadcrumbs.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbling.
