Ingredients

  • 2 tablespoons Butter
  • 1 small, finely chopped Onion
  • 1 tablespoon All-purpose flour
  • 1.5 cups Milk
  • 0.5 cups Heavy cream
  • 2 cups (drained) Sauerkraut
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Caraway seeds (optional)
  • 1 tablespoon (chopped, for garnish) Fresh parsley

Directions

Step 1

Melt the butter in a large skillet or saucepan over medium heat.

Step 2

Add the finely chopped onion and sauté for 4-5 minutes, or until translucent and fragrant.

Step 3

Sprinkle the flour over the onions and stir well. Cook for 1-2 minutes to remove the raw flour taste.

Step 4

Gradually pour in the milk, whisking continuously to prevent lumps from forming. Bring the mixture to a gentle simmer while stirring.

Step 5

Stir in the heavy cream and continue cooking for another 2 minutes until the sauce thickens slightly.

Step 6

Add the drained sauerkraut to the sauce and mix well to coat. Lower the heat and let it simmer for 10-12 minutes to meld the flavors.

Step 7

Season with salt, black pepper, and optional caraway seeds. Taste and adjust seasoning if necessary.

Step 8

Remove from heat and transfer the creamy sauerkraut to a serving dish.

Step 9

Garnish with freshly chopped parsley and serve warm.
