Ingredients

  • 400 g spaghetti
  • 300 g salmon fillet (skinless)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves (minced)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley (chopped)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red chili flakes (optional)
  • 4 liters water (for boiling pasta)

Directions

Step 1

Fill a large pot with 4 liters of water, add a pinch of salt, and bring it to a boil over high heat. Cook the spaghetti according to the package instructions (about 8–10 minutes), until al dente. Reserve 1/2 cup of the pasta water, then drain and set the spaghetti aside.

Step 2

Pat the salmon fillet dry with a paper towel, then season both sides with a pinch of salt and black pepper.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Place the salmon fillet in the skillet and sear for 3-4 minutes on each side until cooked through and lightly golden. Remove the salmon from the skillet and set aside. Once cooled slightly, flake the salmon into bite-sized pieces using a fork.

Step 4

In the same skillet, reduce the heat to medium-low and add the remaining olive oil and butter. Once the butter has melted, add the minced garlic and sauté for about 1 minute until fragrant.

Pour the heavy cream into the skillet, stirring to combine with the garlic. Let it simmer gently for 2-3 minutes, then stir in the Parmesan cheese until melted and the sauce becomes smooth.

Add the cooked spaghetti to the skillet, tossing to coat the pasta evenly in the creamy sauce. If the sauce seems too thick, add a little of the reserved pasta water, 1 tablespoon at a time, until the desired consistency is achieved.

Gently fold the flaked salmon into the pasta, ensuring it is evenly distributed without breaking up the fish too much.
