Ingredients

  • 4 pieces Salmon fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 minced Garlic cloves
  • 1 tablespoon All-purpose flour
  • 1 cup Chicken or vegetable broth
  • 0.5 cup Heavy cream
  • 2 tablespoons, chopped Fresh dill
  • 2 tablespoons Lemon juice
  • 0.5 cup, grated Parmesan cheese
  • 0.5 cup Panko breadcrumbs
  • 0.25 teaspoon Paprika

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray and set it aside.

Step 2

Season the salmon fillets on both sides with salt and black pepper.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sear the salmon fillets for 2-3 minutes on each side until lightly golden. Remove and set aside.

Step 4

In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

Step 5

Whisk in the all-purpose flour and cook for another minute, stirring constantly, to form a roux.

Step 6

Slowly pour in the chicken or vegetable broth while whisking, ensuring no lumps remain.

Step 7

Add the heavy cream, fresh dill, and lemon juice, stirring well. Let it simmer for 2-3 minutes until thickened. Adjust seasoning with a pinch of salt and pepper if needed.

Step 8

Pour the creamy sauce into the prepared baking dish and arrange the seared salmon fillets over the sauce.

Step 9

In a small bowl, combine the Parmesan cheese, panko breadcrumbs, paprika, and the remaining tablespoon of olive oil. Mix until well combined.

Step 10

Sprinkle the breadcrumb mixture evenly over the salmon fillets.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the topping is golden and crispy.

Step 12

Remove from the oven and let cool for 5 minutes before serving.

Step 13

Garnish with additional fresh dill and serve hot with your choice of rice, mashed potatoes, or a green salad.
