Ingredients

  • 2 cups Romaine lettuce
  • 1 cup Baby spinach
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 0.5 small Red onion
  • 1 large Avocado
  • 1 cup Cooked chicken breast (optional)
  • 0.25 cup Mayonnaise
  • 0.25 cup Greek yogurt
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Thoroughly wash and dry the romaine lettuce and baby spinach. Chop them into bite-sized pieces and place them in a large salad bowl.

Step 2

Peel the cucumber, remove the seeds, and slice it into thin half-moons. Add to the bowl.

Step 3

Cut the cherry tomatoes in half, and thinly slice the red onion. Add both to the bowl.

Step 4

Dice the avocado and gently toss it with the salad mixture. If using chicken breast, shred or dice it and mix it in as well.

Step 5

In a small mixing bowl, combine the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, honey, garlic powder, salt, and black pepper. Whisk until smooth and creamy.
