Ingredients

  • 16 oz Velveeta cheese
  • 10 oz Rotel diced tomatoes and green chilies
  • 1 lb Ground beef
  • 0.5 cup Onion
  • 1 tsp Garlic powder
  • 1 tsp Chili powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 Jalapeño (optional, diced)
  • 2 tbsp Milk (optional for thinning)

Directions

Step 1

In a medium skillet over medium heat, add ground beef and cook until browned, about 5-7 minutes. Break the meat up into small crumbles as it cooks.

Step 2

Add the diced onion, garlic powder, chili powder, salt, and black pepper to the skillet with the beef. Stir and cook for another 2-3 minutes until the onion softens slightly.

Step 3

Drain any excess grease from the skillet and set the cooked beef mixture aside.

Cut the Velveeta cheese into 1-inch cubes to help it melt evenly.

In a large saucepan or slow cooker, combine the Velveeta cheese cubes and the can of Rotel diced tomatoes and green chilies (do not drain the liquid from the Rotel).

Heat over low heat (or set the slow cooker to low heat), stirring occasionally, until the cheese is completely melted and smooth. This will take about 8-10 minutes on the stovetop.
