Ingredients

  • 12 oz Pasta (such as penne or fettuccine)
  • 2 tbsp Olive oil
  • 8 oz Smoked sausage (sliced into rounds)
  • 3 Garlic cloves (minced)
  • 2 cups Roasted red peppers (jarred, drained)
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese (grated)
  • 0.25 cup Fresh basil leaves (chopped)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Crushed red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned on both sides, about 5-7 minutes. Remove from the skillet and set aside.
