Ingredients

  • 1 cup Raw cashews
  • 0.75 cup Unsweetened almond milk
  • 2 tablespoons Lemon juice
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Olive oil or avocado oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried dill
  • 1 teaspoon Dried parsley
  • 1 teaspoon Dried chives
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Water (as needed)

Directions

Step 1

Place the raw cashews in a bowl and cover them with hot water. Let them soak for 10 minutes (or soak in cold water for 4-6 hours if you have more time).

Step 2

Drain the cashews and add them to a blender or food processor.

Step 3

Add the unsweetened almond milk, lemon juice, apple cider vinegar, olive oil, garlic powder, and onion powder to the blender.

Step 4

Blend the mixture on high speed until smooth and creamy. If the mix is too thick, add water 1 tablespoon at a time until you achieve your desired consistency.

Step 5

Transfer the blended mixture to a bowl and stir in the dried dill, parsley, and chives.

Step 6

Season with salt and black pepper to taste, and mix well to combine.

Step 7

Cover and refrigerate the dressing for at least 30 minutes to allow the flavors to meld together.

Step 8

Serve chilled over salads, with raw vegetables, or as a dip. Store leftovers in an airtight container in the refrigerator for up to 5 days.
