Ingredients

  • 500 g radishes
  • 1 medium potato
  • 1 medium onion
  • 2 garlic cloves
  • 2 tbsp butter
  • 1 liter vegetable broth
  • 100 ml heavy cream
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh chives
  • 1 tbsp olive oil

Directions

Step 1

Wash the radishes thoroughly, trim the ends, and cut them into quarters.

Step 2

Peel the potato and cut it into small cubes.

Step 3

Peel and chop the onion finely.

Step 4

Peel and mince the garlic cloves.

Step 5

In a large pot, heat the olive oil and butter over medium heat.

Step 6

Add the chopped onion to the pot and sauté until translucent, about 5 minutes.

Step 7

Add the minced garlic and sauté for another minute, until fragrant.

Step 8

Add the radishes and potato cubes to the pot, stirring to combine with the onion and garlic.

Step 9

Pour the vegetable broth into the pot and bring it to a boil.

Step 10

Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the radishes and potatoes are tender.

Step 11

Remove from heat and use an immersion blender to purée the soup until smooth. Alternatively, transfer the soup to a blender and purée in batches.

Stir in the heavy cream and season with salt and black pepper to taste.

Return the pot to low heat and cook for another 5 minutes to heat through.
