Ingredients

  • 12 oz Fettuccine pasta
  • 2 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 1 cup Pumpkin puree (not pumpkin pie filling)
  • 1 cup Heavy cream
  • 3 oz Grated Parmesan cheese
  • 1 cup Vegetable or chicken broth
  • 0.25 tsp Nutmeg, ground
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper, freshly ground
  • 6 Fresh sage leaves (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the fettuccine pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, being careful not to burn it.

Step 3

Stir in the pumpkin puree, heavy cream, and broth. Mix until well combined and smooth, cooking for about 2-3 minutes.

Step 4

Add the grated Parmesan cheese, ground nutmeg, salt, and black pepper. Stir continuously until the cheese has melted and the sauce is creamy, about 3 minutes.

Step 5

If the sauce is too thick, stir in small amounts of the reserved pasta water until it reaches your desired consistency.

Step 6

Add the cooked fettuccine to the skillet and toss to coat the pasta evenly with the sauce. Cook for 1-2 minutes over low heat to let the flavors meld together.

Step 7

Taste and adjust the seasoning with more salt or pepper, if needed.

Step 8

Plate the fettuccine and garnish with fresh sage leaves (optional). Serve immediately.
