Ingredients

  • 300 grams pasta of choice
  • 400 grams prawns, peeled and deveined
  • 2 tablespoons olive oil
  • 4 units garlic cloves, minced
  • 150 grams cherry tomatoes, halved
  • 200 milliliters heavy cream
  • 50 grams parmesan cheese, grated
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon red pepper flakes
  • 100 milliliters white wine

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

Step 3

Add the prawns to the skillet and cook for 2-3 minutes on each side until they are pink and cooked through. Remove the prawns from the skillet and set aside.

Step 4

In the same skillet, add the white wine and let it simmer for 2 minutes, scraping any browned bits from the bottom.

Step 5

Add the cherry tomatoes and cook for 3-4 minutes until they start to soften.

Step 6

Reduce the heat to medium and stir in the heavy cream, parmesan cheese, lemon zest, salt, black pepper, and red pepper flakes. Let the sauce simmer for 3-5 minutes until it thickens slightly.

Step 7

Return the prawns to the skillet and mix them into the sauce.

Add the cooked pasta to the skillet; toss to coat with the sauce. If the sauce is too thick, add some reserved pasta cooking water, a tablespoon at a time, until the desired consistency is reached.

Step 9

Garnish with freshly chopped parsley and serve immediately.
