  • 6 slices Thick-cut bacon

  • 1.5 cups Heavy cream
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Smoked paprika
  • 2 stalks Green onions
  • 0.5 cup Shredded cheddar cheese (optional)

Directions

Step 1

Peel and dice the potatoes into 1/2-inch cubes. Set aside in a bowl of cold water to prevent browning.

Dice the bacon into small pieces. Heat a large pot or Dutch oven over medium heat, and cook the bacon until crispy. Remove the cooked bacon using a slotted spoon and drain on a paper towel. Set aside. Reserve 2 tablespoons of the bacon drippings in the pot.

Finely dice the onion and celery. Mince the garlic. Add the butter to the pot with the reserved bacon drippings and let it melt over medium heat. Add the diced onion and celery, and sauté for 4-5 minutes until softened.
