Ingredients

  • 1 cup Greek yogurt (plain or vanilla)
  • 2 tablespoons Mayonnaise
  • 2 tablespoons Honey
  • 1 tablespoon Lemon juice (freshly squeezed)
  • 1 teaspoon Poppy seeds
  • 2 cups Strawberries (hulled and sliced)
  • 1 cup Blueberries
  • 1 cup Pineapple (diced, fresh or canned and drained)
  • 1 cup Green grapes (halved)
  • 2 medium Bananas (sliced)
  • 1 cup Mandarin oranges (canned, drained)

Directions

Step 1

In a small mixing bowl, whisk together the Greek yogurt, mayonnaise, honey, lemon juice, and poppy seeds until smooth and well combined. Set the dressing aside.

Step 2

Prepare the fruit: hull and slice the strawberries, halve the grapes, dice the pineapple, and slice the bananas. If using canned mandarin oranges, drain them well.

Step 3

In a large mixing bowl, combine the strawberries, blueberries, pineapple, green grapes, bananas, and mandarin oranges.

Step 4

Pour the poppy seed dressing over the fruit and gently toss to coat all the fruit evenly. Be careful not to mash the fruit.

Step 5

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Step 6

Gently toss the salad one more time before serving to redistribute the dressing.

Step 7

Serve chilled as a side dish or a light dessert. Enjoy!
