Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 pieces Shallots, finely chopped
  • 3 pieces Garlic cloves, minced
  • 1 cup Chicken broth
  • 0.75 cup Heavy cream
  • 0.5 cup Pomegranate juice
  • 0.5 cup Pomegranate seeds
  • 1 tablespoon Fresh thyme leaves
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season both sides of the chicken breasts with salt, black pepper, and garlic powder.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

Step 3

Sear the chicken breasts for 4-5 minutes on each side until golden brown and cooked through. Remove them from the skillet and set aside.

Reduce the heat to medium and add the remaining olive oil and butter to the skillet.

Add the chopped shallots to the skillet and sauté for 2-3 minutes until softened.
