Roast the poblano peppers over an open flame or in the oven until the skin is charred and blistered. Transfer to a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel off the skin, remove the seeds and stems, and roughly chop the peppers.
Season the chicken breasts with salt, pepper, and cumin powder on both sides.
