Ingredients

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 3 pcs garlic cloves, minced
  • 1 pc red bell pepper, thinly sliced
  • 1 pc zucchini, sliced into half moons
  • 1 pc yellow squash, sliced into half moons
  • 1.5 cups cherry tomatoes, halved
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 0.75 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup fresh basil leaves, chopped
  • 4 quarts water for boiling pasta

Directions

Step 1

Fill a large pot with 4 quarts of water, add 1 teaspoon of salt, and bring it to a boil.

Step 2

Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 3

While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Add the minced garlic to the skillet and sauté for 1 minute until fragrant.

Add the red bell pepper, zucchini, and yellow squash to the skillet. Cook for 4-5 minutes, stirring occasionally, until the vegetables start to soften.
