Ingredients

  • 12 oz pasta (such as fettuccine or penne)
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 large carrot, diced
  • 1 medium zucchini, diced
  • 1.5 cups broccoli florets
  • 1.25 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

While the pasta cooks, heat butter and olive oil in a large skillet over medium heat.

Add the minced garlic to the skillet and sauté for 1 minute, until fragrant.

Stir in the diced carrots, zucchini, and broccoli florets. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.
