  • 240 ml Heavy cream
  • 120 ml Whole milk
  • 100 g Freshly grated Parmesan cheese
  • 2 large Eggs
  • 2 large Egg yolks
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper
  • 1 tbsp Unsalted butter
  • 1 tbsp Chopped fresh chives (optional, for garnish)

Directions

Step 1

Preheat your oven to 325°F (160°C). Grease four 6-ounce ramekins with the unsalted butter and set them aside.

Step 2

In a medium saucepan, combine the heavy cream and whole milk. Heat over medium heat until the mixture is warm but not boiling. Remove from heat and set aside.

Step 3

In a large mixing bowl, whisk together the eggs, egg yolks, and freshly grated Parmesan cheese until smooth.

Slowly pour the warm cream mixture into the egg mixture, whisking constantly to prevent the eggs from curdling.
