Ingredients

  • 2 lbs Russet potatoes
  • 6 tbsp Unsalted butter
  • 0.5 cups Heavy cream
  • 0.5 cups Milk (whole or 2%)
  • 1 large Yellow onion
  • 1 head Garlic
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil and wrap in aluminum foil. Roast in the oven for 30-35 minutes or until the garlic is soft and golden. Let it cool slightly, then squeeze the roasted garlic out of the skins.

Step 3

While the garlic roasts, peel and chop the potatoes into evenly sized chunks. Place them in a large pot and cover with cold water. Add 1 teaspoon of salt and bring to a boil. Cook the potatoes for 15-20 minutes, or until they are fork-tender.

Step 4

While the potatoes are boiling, thinly slice the yellow onion. In a skillet over medium-low heat, melt 2 tablespoons of butter. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 15-20 minutes. Set aside.

Drain the cooked potatoes and return them to the pot. Mash them using a potato masher or ricer until smooth.

In a small saucepan, combine the heavy cream, milk, roasted garlic, and remaining 4 tablespoons of butter. Heat until warm but not boiling. Add this mixture to the mashed potatoes in increments, stirring to combine until the desired creaminess is achieved.
