Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cloves Garlic, minced
  • 1 cup Chicken stock (low-sodium)
  • 2 tablespoons Dijon mustard
  • 0.5 cup Plain Greek yogurt (low-fat)
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Lemon juice

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 4-5 minutes on each side or until golden brown. Remove from the skillet and set aside.

Step 3

Lower the heat to medium and add the minced garlic to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 4

Pour in the chicken stock, using a spatula to scrape up any bits stuck to the pan. Bring the stock to a gentle simmer.

Step 5

Whisk in the Dijon mustard and let the mixture simmer for 3-4 minutes to reduce slightly.

Step 6

Lower the heat to low and stir in the Greek yogurt until smooth and creamy. Add the lemon juice and mix well.

Step 7

Return the chicken breasts to the skillet, spooning the sauce over the top. Cover and simmer for 10-12 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 8

Sprinkle the chopped parsley over the chicken before serving. Adjust seasoning with additional salt and pepper if necessary.

Step 9

Serve hot with your favorite side dish, such as roasted vegetables or steamed rice.
