Ingredients

  • 3 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 8 ounces Cremini mushrooms, sliced
  • 2 small Shallots, finely chopped
  • 2 Garlic cloves, minced
  • 0.25 cup Whiskey
  • 0.5 cup Beef stock
  • 0.5 cup Heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Fresh thyme leaves, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground

Directions

Step 1

In a large skillet over medium heat, melt the butter and add the olive oil. This helps the butter from burning.

Step 2

Add the sliced cremini mushrooms to the skillet and sauté for 5-7 minutes, or until the mushrooms are golden brown and have released their moisture.

Step 3

Add the chopped shallots and sauté for another 2 minutes until translucent and fragrant.

Step 4

Stir in the minced garlic and cook for 1 more minute, being careful not to let it burn.

Step 5

Carefully pour in the whiskey and stir to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 1-2 minutes to burn off the alcohol.

Step 6

Pour in the beef stock and bring the mixture to a gentle simmer. Let it reduce slightly, about 3-5 minutes.

Step 7

Reduce the heat to low and stir in the heavy cream, Dijon mustard, and chopped thyme. Simmer for another 2-3 minutes until the sauce is thickened and creamy.

Step 8

Season the sauce with salt and freshly ground black pepper to taste.

Step 9

Remove the skillet from heat and serve the sauce warm, spooned generously over your favorite steak.
