Ingredients

  • 300 g spaghetti or fettuccine
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic cloves
  • 250 g button or cremini mushrooms
  • 1 cup heavy cream
  • 50 g Parmesan cheese
  • 2 tbsp fresh parsley
  • 0 to taste salt
  • 0 to taste freshly ground black pepper
  • 1 cup pasta water

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of the pasta water and then drain the pasta.

Step 2

While the pasta is cooking, clean and slice the mushrooms thinly. Mince the garlic cloves.

Step 3

In a large skillet over medium heat, add the olive oil and butter. Once the butter has melted, add the minced garlic and sauté for about 1 minute until fragrant.

Step 4

Add the sliced mushrooms to the skillet, seasoning them with salt and pepper. Sauté for 5-7 minutes until they are golden brown and have released their moisture.

Reduce the heat to low, and pour in the heavy cream, stirring gently to combine with the mushrooms for about 2-3 minutes.

Add the grated Parmesan cheese to the sauce and stir until fully melted and the sauce is smooth and thickened.
