Ingredients

  • 400 grams Button mushrooms
  • 1 medium, finely chopped Onion
  • 3 minced Garlic cloves
  • 1 inch piece, minced Ginger
  • 2 medium, pureed Tomatoes
  • 1 cup Coconut milk
  • 2 teaspoons Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon or to taste Salt
  • 2 tablespoons Oil
  • 2 tablespoons, chopped Fresh cilantro leaves
  • 1 tablespoon Lemon juice

Directions

Step 1

Clean the mushrooms by wiping them with a damp cloth or paper towel, and then slice them evenly.

Step 2

Heat oil in a large pan over medium heat. Add the chopped onions and sauté until golden brown, about 5-7 minutes.

Add the minced garlic and ginger to the pan, and sauté for another minute until fragrant.

Stir in the pureed tomatoes and cook until the oil separates from the mixture, approximately 5 minutes.

Add the coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Stir well and cook for another 2 minutes to release the spices' flavors.
