Ingredients

  • 1 pound Beef stew meat
  • 2 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 medium Onion, finely diced
  • 3 cloves Garlic, minced
  • 10 ounces Button or cremini mushrooms, sliced
  • 4 cups Beef broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Thyme, dried
  • 1 cup Heavy cream
  • 2 tablespoons All-purpose flour
  • 1 cup Water
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat a large soup pot or Dutch oven over medium-high heat. Add the olive oil.

Step 2

Season the beef stew meat with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Sear the beef in the heated olive oil until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

Step 3

In the same pot, add the diced onion. Sauté for 3-4 minutes until softened, then add the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the sliced mushrooms and cook for 5-6 minutes until they release their moisture and begin to brown slightly.

Step 5

Return the seared beef to the pot. Pour in the beef broth, Worcestershire sauce, and sprinkle in the thyme. Stir to combine.

Step 6

Bring the soup to a gentle boil, then reduce the heat to low. Cover and simmer for 20 minutes to allow the flavors to meld and the beef to become tender.

Step 7

In a small bowl, whisk together the flour and water until smooth. Slowly pour the mixture into the soup while stirring to thicken the broth. Cook for another 5 minutes.

Step 8

Reduce the heat to low and stir in the heavy cream. Cook for 2-3 minutes until heated through. Adjust the seasoning with the remaining 1/2 teaspoon of salt and more black pepper to taste.

Step 9

Ladle the creamy mushroom beef soup into bowls and garnish with chopped parsley, if desired. Serve warm.
