  • 4 large russet potatoes
  • 6 slices bacon
  • 1 stick unsalted butter
  • 0.5 cup heavy cream
  • 0.5 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup chives

Directions

Step 1

Peel and quarter the russet potatoes, then place them in a large pot.

Fill the pot with enough cold water to cover the potatoes by about an inch. Add a pinch of salt to the water.

Bring the water to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the potatoes are tender, about 15-20 minutes.

While the potatoes are cooking, place the bacon slices in a cold large pan and cook over medium heat until crispy, about 8-10 minutes. Turn the bacon occasionally to ensure even crispiness. Once done, transfer the bacon to a paper towel-lined plate to drain excess fat.
