  • 2 large Lobster tails
  • 4 tablespoons Butter
  • 2 tablespoons Olive oil
  • 4 minced Garlic cloves
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese
  • 12 ounces Pasta
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes

Directions

Step 1

Begin by cooking the pasta in a large pot of salted boiling water until al dente, following the package instructions. Reserve 1 cup of pasta water, drain the pasta, and set aside.

Step 2

While the pasta cooks, prepare the lobster tails. Using kitchen shears, cut through the top shell of each lobster tail to the tip of the tail. Gently pull apart the shell, and remove the lobster meat. Cut the meat into 1-inch pieces.

Step 3

In a large skillet, melt 2 tablespoons of butter with 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add the lobster pieces to the skillet, season with salt, black pepper, and red pepper flakes. Sauté the lobster for about 3-4 minutes, or until just cooked through and opaque. Remove lobster from the skillet and set aside.

In the same skillet, melt the remaining 2 tablespoons of butter. Pour in the heavy cream, and bring to a gentle simmer, stirring occasionally.
