Ingredients

  • 8 whole Organic lemons
  • 750 ml Everclear (95% alcohol) or vodka (minimum 40% alcohol)
  • 1000 ml Whole milk
  • 500 ml Heavy cream
  • 600 g Granulated sugar
  • 1 whole Vanilla bean
  • 500 ml Water

Directions

Step 1

Thoroughly wash and dry the lemons to remove any wax or residue. Use a vegetable peeler or microplane to carefully remove the lemon peel, avoiding the bitter white pith beneath. Place the peels in a large glass jar or container with an airtight lid.

Step 2

Pour the Everclear or vodka over the lemon peels, ensuring the alcohol fully covers them. Seal the jar and let it sit in a cool, dark place for 7 days to infuse. Shake the jar gently every day to help extract the lemon oils.

Step 3

After 7 days, strain the alcohol through a fine-mesh sieve or cheesecloth to remove the lemon peels. Set the infused alcohol aside.

Step 4

In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the saucepan. Heat over medium-low heat, stirring frequently, until the sugar is completely dissolved. Do not let the mixture boil.

Remove the saucepan from the heat and let it cool to room temperature. Remove the vanilla bean pod.

Gradually mix the cooled milk and cream mixture into the lemon-infused alcohol, whisking gently to combine. Taste and adjust the sweetness if needed by adding more sugar and stirring until dissolved.

Use a funnel to pour the creamy limoncello into sterilized glass bottles with tight-fitting lids. Store the bottles in the refrigerator or freezer for at least 24 hours before serving to allow the flavors to meld.
