Ingredients

  • 2 pounds Yukon Gold potatoes
  • 2 teaspoons Salt
  • 1 cup Mayonnaise
  • 1 cup Greek yogurt
  • 3 tablespoons Fresh lime juice
  • 1 teaspoon Lime zest
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Honey
  • 0.25 cup Fresh cilantro, chopped
  • 2 stalks Green onions, finely sliced
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Paprika (for garnish)

Directions

Step 1

Wash and peel the potatoes if desired. Cut them into bite-sized chunks, approximately 1-inch cubes.

Step 2

Place the potato chunks in a large pot and cover with cold water. Add 2 teaspoons of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat. Reduce the heat to medium and simmer the potatoes for 12-15 minutes, or until tender when pierced with a fork.

Step 4

While the potatoes are cooking, prepare the creamy lime dressing. In a medium mixing bowl, whisk together the mayonnaise, Greek yogurt, lime juice, lime zest, Dijon mustard, and honey until smooth and well combined.

Step 5

Drain the cooked potatoes and transfer them to a large mixing bowl. Allow them to cool slightly for 5-10 minutes.

Step 6

Pour the lime dressing over the warm potatoes. Gently toss to coat the potatoes evenly with the dressing.

Step 7

Add the chopped cilantro and sliced green onions to the potato salad. Mix gently to combine.

Step 8

Season the salad with ground black pepper, adjusting to taste. If needed, add additional salt to taste.

Step 9

Cover the bowl with plastic wrap or a lid and refrigerate the potato salad for at least 1 hour to allow the flavors to meld.

Step 10

Before serving, give the salad a final stir, then sprinkle with a dash of paprika for garnish. Serve chilled or at room temperature.
