Ingredients

  • 8 ounces Low-fat cream cheese
  • 1 cup Plain Greek yogurt (unsweetened, non-fat)
  • 0.25 cup Lime juice (freshly squeezed)
  • 1 teaspoon Lime zest
  • 3 tablespoons Powdered stevia or erythritol
  • 1 teaspoon Vanilla extract
  • 0.5 cup Heavy whipping cream
  • 1 teaspoon Gelatin powder (unflavored)
  • 2 tablespoons Water (cold)

Directions

Step 1

In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water. Allow it to sit for 5-7 minutes to bloom.

Step 2

While the gelatin blooms, in a mixing bowl, use an electric mixer or whisk to beat the cream cheese until smooth and creamy.

Step 3

Add the Greek yogurt, lime juice, lime zest, powdered sweetener, and vanilla extract to the cream cheese. Mix thoroughly until well combined and smooth.

Step 4

Once the gelatin has bloomed, heat it gently in the microwave for 10-15 seconds or in a small saucepan over low heat until dissolved. Allow it to cool slightly but not set.

Step 5

Slowly pour the dissolved gelatin into the lime mixture while stirring continuously to ensure even distribution. Set aside.

Step 6

In a separate chilled bowl, whip the heavy cream until soft peaks form, using an electric mixer or whisk. Be careful not to over-whip.

Step 7

Gently fold the whipped cream into the lime mixture, using a spatula, until fully incorporated and fluffy.

Step 8

Divide the mousse evenly among six small serving glasses or bowls. Smooth the tops if desired.

Step 9

Refrigerate for at least 2-3 hours, or until the mousse is set and firm.

Step 10

Serve chilled, garnished with extra lime zest or a thin lime slice, if desired.
