Ingredients

  • 113 grams unsalted butter, melted
  • 50 grams granulated sugar
  • 125 grams all-purpose flour
  • 50 grams shredded sweetened coconut
  • 397 grams sweetened condensed milk
  • 80 milliliters fresh lime juice
  • 1 tablespoon lime zest
  • 3 units large egg yolks
  • 10 grams powdered sugar (for garnish, optional)

Directions

Step 1

Preheat your oven to 175°C (350°F). Line an 8x8-inch (20x20 cm) square baking pan with parchment paper, allowing some overhang for easy removal.

Step 2

In a medium mixing bowl, combine the melted butter, granulated sugar, all-purpose flour, and shredded sweetened coconut. Stir until a crumbly dough forms.

Step 3

Press the dough evenly into the bottom of the prepared baking pan to form the crust. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.

Step 4

While the crust is baking, prepare the lime filling. In a separate medium bowl, whisk together the sweetened condensed milk, fresh lime juice, lime zest, and egg yolks until smooth and well combined.

Step 5

When the crust is done baking, remove it from the oven and allow it to cool slightly, about 5 minutes.

Step 6

Pour the lime filling evenly over the slightly cooled crust, spreading it out with a spatula if necessary.

Step 7

Return the pan to the oven and bake for an additional 20 minutes, or until the filling is set and slightly jiggles in the center when shaken.

Step 8

Remove the bars from the oven and allow them to cool to room temperature in the pan. Then refrigerate for at least 2 hours, or until fully chilled and firm.

Step 9

Once chilled, use the parchment paper overhang to lift the bars out of the pan. Slice into 12 squares or rectangles.

Step 10

Dust with powdered sugar, if desired, before serving. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
