Ingredients

  • 1 cup Dry green lentils
  • 2 tablespoons Olive oil
  • 1 medium Onion, diced
  • 1 medium Carrot, diced
  • 1 stalk Celery stalk, diced
  • 3 cloves Garlic cloves, minced
  • 4 cups Chicken or vegetable broth
  • 1 cup Canned diced tomatoes
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 slices Bacon slices, cooked until crispy and crumbled
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Rinse the lentils under cold water and set aside.

Step 2

In a large pot, heat the olive oil over medium heat.

Add the diced onion, carrot, and celery, and cook for 5-7 minutes until softened.

Stir in the minced garlic and cook for 1-2 minutes until fragrant.

Add the rinsed lentils, chicken or vegetable broth, diced tomatoes, cumin, smoked paprika, salt, and black pepper. Stir to combine.
