Ingredients

  • 120 ml Fresh lemon juice
  • 2 tablespoons Lemon zest
  • 200 grams Granulated sugar
  • 85 grams Unsalted butter
  • 3 pieces Large eggs
  • 60 ml Heavy cream
  • 1 tablespoon Cornstarch
  • 0.25 teaspoons Salt

Directions

Step 1

In a medium saucepan, combine the granulated sugar, cornstarch, and salt. Whisk to evenly distribute the dry ingredients.

Step 2

Gradually whisk in the fresh lemon juice and lemon zest until the mixture is smooth and well combined.

Step 3

In a separate bowl, lightly beat the eggs, then add them to the saucepan along with the heavy cream. Whisk until fully incorporated.

Step 4

Place the saucepan over medium heat and cook the mixture, stirring constantly with a heatproof spatula, until it begins to thicken. This will take around 8-10 minutes. Do not let the mixture boil, as this can cause the eggs to curdle.
