  • 2 lbs Yukon Gold potatoes
  • 2 tsp Salt
  • 0.5 cup Mayonnaise
  • 0.25 cup Sour cream
  • 1 tbsp Red wine vinegar
  • 2 tbsp Olive oil
  • 1 tbsp Dijon mustard
  • 1 clove Garlic, minced
  • 2 tbsp Fresh parsley, finely chopped
  • 2 tbsp Fresh basil, finely chopped
  • 0.25 cup Red onion, finely diced
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Parmesan cheese, grated
  • 0.5 tsp Black pepper

Directions

Step 1

Wash and peel the Yukon Gold potatoes. Cut them into bite-sized cubes, approximately 1-inch pieces.

Step 2

Place the potatoes into a large pot and cover with cold water. Add 1 teaspoon of salt to the pot.

Bring the water to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes until they are fork-tender, about 12–15 minutes.

While the potatoes are cooking, prepare the dressing by combining mayonnaise, sour cream, red wine vinegar, olive oil, Dijon mustard, and minced garlic in a small mixing bowl. Whisk until smooth.
